Was it the easiest thing to do? No. Did I get up at the crack of dawn to get it done? Yes. Worth it in the end? Absolutely.
Today was the annual “Thanksgiving Meal” at work. A gluttony of starch, coma inducing turkey and enough fat to keep a hibernating bear happy for a long time. Tables of desserts, mac and cheese, potatoes 19 ways and rolls….which I need to avoid to lessen my rolls. I shared with you in a previous post about how amazingly supportive my co-worker and friend Scott was joining me in solidarity for this meal. I did not want to serve him some gross, flavorless lunch. What I made was pretty tasty and while I had to get up very early to get it all done it was well, well worth it. I thought I would share the menu, some pics and the recipes with you today! It’s not technically Thanksgiving yet, but I am learning that everyday is a day for me to give thanks and I am very grateful for this meal and the friend who sat by me to enjoy it…far, far away from the pumpkin pies….
